::cupcakes::

i haven't bake for awhile and my hands are itchy today. since we are going to a friend's house for dinner this evening, and is the first time we visiting his new house, so i decided to make some cupcakes for him...

i started by choosing the cupcake paper mold, i bought quite a lot of different pattern cupcake mold from usa in march this year

decided on my choice and i start shredding carrot for carrot cupcake, and shredding apple for another batch of apple cupcake

i go a little too far by coloring the fondant with different colors, i don't know why am i doing this but i seem not happy to let the cupcake barren and expose today, eventhough any additional cupcake decorations are extra calories and sugar but i think i am going to decorate them today regardless of the health concious thoughts....

with some ideas conceived in my mind, i start choosing my letter cutter "f.o.r. y.o.u.r. n.e.w. h.o.m.e" and determine the color

and i beat cream cheese, butter and confectionery sugar, add grated lemon zest and lemon to make cream cheese frosting for the cupcakes...

the end result, quiet amateur, but i am quite satisfied even though the fondant letters aren't that pretty and perfect. i guess what is important is that i enjoyed the process of baking and decorating them, it relaxes me and rather therapeutic to me..

i baked too many cupcakes (24) and i know we can never finish them all by ourselves, so i am decorating a few more for my little nephew. i am short of cream cheese frosting by now, so i cannot pipe sparingly and instead i just spread the remaining on the cupcakes for him and add crushed walnut and sprinkle color candies, .... little boy is less critical and he will eat everything that is sweet and delicious....

as for me, i had one simple one for tea.... no extra decoration besides the cream cheese frosting.. the lemon zest is quite refreshing and bring out the full aroma of carrot cupcake
