i told you i am stressed out. i baked again this morning. despite of the not so successful matcha mousse cake, i baked again, this time i baked a batch of gâteaux au citroen cupcakes.
i am happy with the result, they are all identical in size, and all nicely rised up!!
i improvised the recipe a little bit by reducing the sugar and added quite a lot of pure chocolate nibs....
and discard the idea of covering the cupcake with a layer of icing sugar glazing. this is how the inard of my cupcake looks like with some bit of chocolate to compliment the lemon scent...
i was thinking of pretty up my cupcake but on second thought that mean a lot more cream, sugar and unnecessary calories, so i drop the idea, sometime, simple is beautiful!!
