lcb.cooking.demo

this is your first experience with le cordon bleu. the trip was planned long time ago along with the course registration.
on the day itself, you have to wake up really early to be at lcb on time for the day course. and the morning consists of a cooking demonstration.
 the starter - duck foie gras 'royale' custard and mushroom cream. this is the plate presented on the table after the cooking demo.
this is the place you got served with, despite of the look, it's tasty especially the mushroom cream that has truffle added to it, you almost lick your plate clean.

 the main course -  stuffed saddle of lamb with a champagne glaze, the stuffed vegetable look so harmonious with the lamb and the meat is in perfect pink.
a mushroom gratin that serves as a side, this was a tad too dry.  since the cooking demo has to cater for the food tasting of all the students, along with time constraint this is expected to be a tad dryer than normal gratin.

 dessert -  small almond and chocolate financier with light milk chocolate cream

you're given the recipe with the ingredients but not the method. so you have to listen (to the english translation) and quickly write down the recipe while observing how the chef cooks.  all in all it's a very interesting experience and your first ever exposure to the classical french cuisine. loving it!
