well, after the not so successful napoleon, i decided to try charlotte today. making charlotte is a lot of work but i hope the result will be worth while....
first puree the strawberries, strain through the shiver to remove seeds and lumps and add some sugar to make the strawberry syrup, and puree for the strawberry cream with gelatin sheets
whip the heavy cream till light and fluffy... fold in some part of the strawberry puree that has gelatin sheet dissolved in it...
slice some fresh strawberry for the assembly of the charlotte
soak the lady finger into the syrup and quickly arrange the bottom and the side of the mold with lady finger, pour the strawberry cream, layer with freshly sliced strawberry, add more cream and finally topped with more lady finger...
now it's in the fridge to sit for at least 4 hours...
will my charlotte be pretty?? we'll see...
