storming.through.mango.coconut.financier

the weather has been weird the last two days. not only stormy, windy and rainy but the changes of the sky and the color is also a bit strange to you.  you couldn't explain it,  but you just think that the mother nature may be telling something that you are unaware of.  you submit this thought to God, for Jesus has calmed the sea and the storm of galilee sea.  what else your God cannot do.

there is news about the danger that the dike in the northern region of lowland will break and cause flood. your hometown is seriously in flood today after the 12 hours of non stop rain.
sitting at home, you are still not in the mood for work despite the fact that you just completed what you needed to do as you promised your client in belgium.  so sent and consider it done ^^.

there are two big mangos sitting on the fruit basket since new year's eve, so you decided to do something about it. since  life gives you mango, so you turn them into mango coconut financiers.  
you didn't make french madeleine, that will be another time, you just have extra batter that you need to use up, so you put them in the madeleine silicone mould to bake with your finiancier.

first time making financiers and it's a success and in fact rather easy to make plus it only calls for egg whites and no yolk, which is in line with your eating pattern re-engineering.

 unlike cake, financiers are bite size and good to go with a cup of tea or coffee...
the mango and coconut scents kinda warm up your mood and body even though just a look out of the window you see the rain, the storm and the sky that setting ...
