Kyoto Wagashi: Keiran Somen (鶏卵素麺)

Another Kyoto wagashi from a well known wagashi shop called "Kyoto Tsuruya" (京都鶴屋 鶴寿庵) that I bought and brought back to the Netherlands to enjoy. This is a rather unusal one, not just because of the name that literally translates into "Keiran Somen Angel Hair" (鶏卵素麺). This wagashi has no mochi but made of egg yolks and sugar....

Keiran Somen is rather sweet and taste of heavy egg yolks. The sweetness from the sugar and the saltiness from the egg yolks create a real harmony in the taste bud... Again, only Japanese can think of such harmonization.
